At this appointment the cheesemonger will talk to you about the food you enjoy, the food you’ll be serving at your celebration and then take you through the extensive cheese selection, helping you choose the best cheeses for your bespoke cake.

To help couples in their cheese selection, Paxton’s has also curated a range of delicious pre-designed, visually stunning cheese wedding cakes. Ranging in price from £70 all the cakes feature some of the best British and continental European cheeses that Paxton’s is renowned for selling.

Also, if you are looking for cheese as a cheese course for your celebrations you can arrange to visit one of the shops to discuss this. The cheesemonger will help you select a range of cheeses that will complement the food and drinks that you will be serving.

Once you have made your selection the team at the shop can then arrange delivery of your cake or cheese to your venue by working with you or with your caterer/venue.

Your wedding cake is not all about the pretty decorations and multiple tiers. After you’ve been snapped cutting the cake, you’ll be dishing it out to your guests, so you’ll want it to taste as amazing as it looks. Make ordering your wedding cake simple by asking these all-important questions.

What size of cake do I need for my guests?

The size of your cake will, of course, be dependent on how many guests you are inviting. A small cake won’t go around all of your guests if you have 100 plus people attending your day. Ask your cake maker their advice because this may change depending on where you buy your cake.

The size of the tiers can vary as well as the number of tiers you have, so if you like the look of taller cakes you can ask your cake maker if you could have smaller cakes but keep the height. Don’t forget that the base layers of tall tiered cakes are often dummy tiers, made from polystyrene and covered in icing, but these illusion tiers aren’t always that much cheaper. They still take the same amount of time and skill to decorate as the real thing. Also, don’t forget that some people like seconds!

How soon should I order my wedding cake?

You want to be sure that your wedding date is definitely available and that you have plenty of time to try some samples.

Can all of the decoration be edible?

This will depend on what you want your cake to look like! There are so many styles of decoration now, including edible flowers, meringue kisses, popcorn sprayed in a whole range of different colours, sugar flowers, fresh fruits and real blooms. It is best to show your cake maker a few styles that you like and go from there.

Can you cater for allergies?

In modern society, this is a big question. Most companies will be able to work with a whole host of dietary needs, but always check first.

How long can I store the cake for after the day?

Traditionally, when wedding cakes were made up of three tiers of fruit cake, the top tier of a wedding cake was kept for the christening of the couple’s first child. Fruitcake is the best type of cake to use if you want to follow tradition and preserve the top layer because it can last for over a year, properly stored, and if you need to keep it for longer you can freeze it. For any other cake flavours, you will need to check with your supplier how long the sponges will keep for.

The stacked wedding cake tier delicacy originated in a medieval tradition whereby individual cakes were stacked up as high as possible, and the bride and groom were asked to kiss over the top of it.

A successful kiss – without the cakes tumbling down – meant a happy marriage.

How many tiers for a traditional wedding cake? 

A traditional wedding cake has three tiers and each tier of a wedding cake has its own significance.

Tradition has it that the bottom tier is for eating at the ceremony, the middle tier for distributing after the event, and the top tier was saved.

As the traditional recipe is a fruit cake, which has a long shelf life, it’s quite safe to tuck into a slice a few years after the big day.

What is the tradition for the top tier of a wedding cake?

Traditionally, the top tier of the wedding cake was saved until the first child’s christening.

But when couples began to wait longer before starting a family, the significance of the top tier changed and is now known to be saved for the bride and groom’s first wedding anniversary.

Can you have more or less than three tiers of a wedding cake?

Weddings are not a one-size-fits-all occasion[1] and more couples than ever are choosing to ditch the three-tier wedding cake tradition in favour of a single-tier alternative simply because of budget.

You will also want to make sure you have enough cake to go around and feed all of your guests. On the other hand, you don’t want to be left with more cake than you know what to do with at the end of the day either, especially if you’re soon to be jetting off on honeymoon and the left-behind cake would be wasted.

How much wedding cake is actually needed for guests?

Much like the making of a cake itself, it’s about striking the perfect balance between the different ingredients involved – so in this case your budget, number of guests, and aesthetic preferences.

If you find yourself going wide-eyed at cakes with height, you may feel that a stack of at least four tiers is essential, but the reality is that it could just be far too much cake, and money! Luckily for you, though, cake makers have devised many creative solutions…

Rather than ordering additional, unnecessary tiers, why not request taller, slimmer cakes for each tier? These are very much en vogue right now, so most bakers will be happy to oblige, giving you the extra height without extra cake.

What are dummy tiers on a wedding cake?

Formed from a polystyrene base covered in icing and decorated to match the rest of the cake, dummy tiers can reduce waste, make your cake taller and slightly bring down the cost.

Do remember though that this tier will still take the same amount of time to decorate, so it won’t slice a huge chunk off the price! Often seen at wedding fairs, your guests will never guess that dummy tiers aren’t the real thing.

One size doesn’t fit all…

Check what size of cake you will need. If you have only 30 guests, it would be silly to order a huge four-tier wedding cake. If you want the extra height, ask your cake maker if they could include polystyrene layers at the bottom, to save you a little money and so that you aren’t left with cake for breakfast, lunch and dinner for months after the wedding day!

Equally you will want every guest to be able to join you in having a slice of cake, so check what size will cater to your numbers. You can always have smaller, taller rounds for each tier if you want to achieve a tall cake but have fewer portions. And if you want a single tier cake but have a huge guest list, why not display an array of single tier cakes on a decadent dessert table? Where there is cake, there’s a way!

When should you finalise your order?

You want to be sure that your cake maker has all of the details and dates correct to ensure your cake arrives where and when it should. Make sure your chosen cake maker is free on your date by letting them know right from the offset.

Can they cater for allergies?

If you or any of your guests have any allergies, this is something you definitely need to check. Perhaps you could have a few cupcakes alongside your tiered cake to offer to guests with intolerances? How long will your cake last?

If you are having a traditional fruitcake, then if stored correctly your cake could last for up to a year! A sponge cake, on the other hand, would struggle to see out more than a week or two. And if it’s filled with buttercream, you’re only really looking at a few days. Any which way, check with your cake maker so that you can share any leftovers out appropriately.
